Wanting an easy to make potato salad for Christmas lunch, I made this recipe and found it to be quick and easy. Making the potato salad wasn’t expected so it has been adapted from several recipes I found, making my own using what I had.
Looking for recipes, I found many using sour cream or mustard, two ingredients I thought would go well in a potato salad. What we had in the cupboards were Keens mustard powder and Greek yoghurt, so this is what I use.
I love a potato salad with bacon. It needs to be part of the whole potato salad, not a little sprinkled on top for presentation, however, I’m all for some extra on top as well.
I found the dressing to need something to pick it up and a little sweetness. If bacon goes well with potato salad, what goes well with bacon? I had some maple syrup, scrumptious with bacon and gave it the extra sweetness it needed. A teaspoon of sweet smokey paprika pulls in all together.
The cooking preparation can be done in parts as the cooked ingredients are cooled before mixing together. The potatoes, eggs, and bacon can be cooked independently. When preparing a Christmas lunch, including preparing a trifle, it is handy to be able to prepare each part between other activities.
The preparation of the potato salad can be done the day before. For that matter, making the whole thing the day before will let the ingredients blend together overnight.
Potato Egg Salad
Ingredients
- 8 Washed Potatoes
- 8 eggs
- 4 bacon rashers
- 1 cup greek yogurt
- 1 cup mayonnaise
- 50 ml maple syrup
- 3 tsp Keens mustard powder
- 1 tsp Sweet smokey paprika
Instructions
Potatoes Preparation
- Cut potatoes into 2cm cubes, leave the skin on
- Bring a pot of water to the boil
- Add cut potatoes to the boiling water and boil for 5 minutes
- Drain to cool. Potatoes must be cool before mixing, so this can be prepared early first
- The potatoes need to be cooked but remain firm, don't overcook or they will become mushy and break up too easily in the salad
Eggs Preparation
- Place eggs into cold water
- Bring eggs to the boil, then take off the heat and cover with a lid. Leaving them in the water for 12 minutes
- Shell the eggs and cut into chunks
Bacon Preparation
- Cut the bacon into pieces, roughly 1×2 centimetres or to your preference
- Fry bacon pieces until they get some colour, then drain excess fat and oil
Mix Salad Together
- Add the prepared ingredients together in a large mixing bowl
- In a separate bowl, add mayonnaise, yoghurt, mustard powder, smoked paprika, and maple syrup together and mix with a whisk
- Add the mayonnaise mix into the large bowl with the potato, egg, and bacon and stir through
- Put in the fridge to cool and serve when needed
Just made the Potato Egg Salad recipe to go with some lamb loin chops for our Australia Day dinner tonight. Made a half portion version which will be more than enough for 3 of us.
