Special Thai Fried Rice with Pineapple

This is an interesting take on fried rice, finished off by baking it in a hot oven stuffed inside a hollowed-out pineapple. Perhaps not ideal for those who don’t like pineapple in their fried rice (they probably don’t like pineapple on their pizza either) but the novelty of baking it inside a pineapple may get them to give it a go.

Special Thai Fried Rice with Pineapple

Ingredients

  • 1 Pineapple
  • 1 Onion
  • 1 small Tin of Pineapple Pieces
  • 2 rashers Bacon diced and pan-fried
  • 3 tbsp Frozen peas (or beans)
  • 3 tbsp Frozen corn kernels
  • 1 Carrot
  • 200 g Tinned chopped abalone mushrooms
  • 100 g Baby corn
  • 1.5 cups boiled long grain rice
  • 3 tsp Fish sauce
  • 2 Eggs
  • 4 Shallots

Instructions

  • Precook steamed rice and set aside.
  • Cut top of pineapple, about 1/4 from the top, so that the top piece will serve as a lid.
  • Remove the insides of the pineapple, leaving the shell to be used as a container to put the fried rice ingredients into later.
  • Beat eggs with a fork, fry and cut into pieces and set aside.
  • Cook peas, corn and chopped carrot until tender.
  • Combine all ingredients together and fry.
  • Place all ingredients into the pineapple shell.
  • Bake in oven at 250C for 15 minutes.
